Recip: Hot Hummus

A dish becomes memorable when it is carefully prepared and invites the palate to travel. Such is the aim of the chefs at the Guarda Golf Hôtel & Résidences, who share one of their recipes served in the restaurant Le Five.
Ingredients:
500 g cooked chickpeas
140 g tahini
60 cl fresh lemon juice
20 cl olive-oil
80 cl water
10 g salt
1 teaspoon of cumin
1-2 cloves of garlic
50 g butter
1 teaspoon of paprika
1 teaspoon of chilli pepper flakes
1-2 bunches of parsley
Pine nuts

 

Preparation:
Mixe the lemon juice, olive-oil and water. Then add the chickpeas, already peeled. Mix gently to obtain a creamer texture, then at top speed for 5-6 minutes. Set aside in the fridge for at least 1 hour. For the spicy garnish, heat the butter with the spices until the mixture becomes frothy. Pour onto the hummus, heated beforehand. As a final touch, you can sprinkle pine nuts and finely chopped fresh parsley just before serving.
